Shaboo closing at Aria to make way for Japanese grilling restaurant

Shaboo, the upscale dining room in the barMASA restaurant at the Aria, will close Saturday to make way for Chef Masa Takayama’s first foray into teppan Japanese grilling.

Tetsu is set to open in August as the latest restaurant within a restaurant. Teppanyaki chefs will prepare meals that diners may pick from a produce table at the center of room, offering meats, seafood and vegetables.

“I have always been intrigued by the sizzling vegetables, meat and seafood prepared on a teppan grill,” Takayama said in a statement. “The act of choosing your ingredients and interacting with the chef as he prepares them elevates the conventional dinner — creating memories — which is how food is meant to be experienced.”

The menu will include toro tartare with caviar, wagyu beef steak tartare and Pacific lobster sashimi ceviche, and several traditional tataki dishes.

Tataki means to “pound,” a manner of preparing fish and meat to better absorb other flavors for searing. Among those dishes: Wagyu ribeye, and filet mignon-soy vinaigrette. On the side, expect kobe garlic fried rice, yakisoba noodles and seafood udon. Desert? Truffle ice cream, grapefruit granite and yuzu sorbet.

Seating will include four blackjack-style tables and two larger communal tables seating up to 20. Hours will be 5 to 11 p.m. Wednesdays through Sundays inside barMASA, just off the Aria lobby. Reservations may be made by calling 702-590-7111 or online.
