Las Vegas and fresh seafood go together, like, well, Las Vegas and showgirls. That’s right, four-star seafood in the middle of the Mojave Desert isn’t rare—it’s plentiful. Just ask Chef Sean Collins of Japonais as he shows off one of his creations, a lobster from the robata, a Japanese grill. Seafood in Vegas. Has a nice ring to it, no?
