Columnist Muriel Stevens: Hop on over to hotels for Easter brunches

This weekend the patter of little feet won't come from the kids. This is the time when the Easter Bunny will be making his/her rounds at Easter brunches in a number of hotels.

To avoid long waits in line, consider one of the premium brunches that accept reservations.

*The ultra Sterling Brunch at Bally's ($49.95) always puts its best cuisine forward, even more so, on holidays. Featured are all kinds of cold and hot seafood dishes -- including oysters, clams, mussels, a shrimp bar and broiled Maine lobster -- roast duckling, rack of lamb, classic breakfast items, salads of every description, and a dazzling array of desserts. A special Easter Feast will be offered in Bally's Big Kitchen Buffet from noon-10 p.m. for $14.95 per person -- children 7 years and under dine for $6.95. More than 100 items will be featured, including: steamed clams and steamed snow crab legs, a variety of Chinese dishes, roast rib eye, barbecued ribs, leg of lamb, New York steak, braised duck, fried shrimp, rotisserie chicken, an extensive salad bar, an array of cakes and tarts, a make-your-own-sundae station and cherries jubilee and bananas Foster.

*The price of the elaborate Circus Circus Sunday Brunch brunch in THE Steak House has been dropped to $17.95. For reservations call 734-0410.

*MGM's Brown Derby will present its usual lavish Sunday Brunch. Featured are a seafood bar, "exotic" salad bar, sushi, tenderloin of beef, prime rib, rack of lamb, eggs Benedict, smoked salmon, cooked-to-order omelets, unlimited champagne and a wondrous dessert selection. Brunch, served from 9 a.m.-2 p.m., is priced at $28.95 for adults; $10.95 for youngsters 6-12 years; children 5 and under eat free. Dine between 9-10 a.m. and the price is $19.95. *The Desert Inn will offer a special Easter Sunday Brunch in the Terrace Pointe restaurant, 10 a.m.-5 p.m. The restaurant overlooks the tropical lagoon-style pool and the gorgeous grounds, giving the feeling of dining outdoors. The Easter Sunday Brunch -- adults, $25; children 4-11 years, $15; children 3 and under, free -- includes traditional breakfast fare: made-to-order omelets will be served from 10 a.m.-noon, plus smoked salmon, shrimp cocktail, Steak Diane, stuffed shrimp, and much more. Whole roasted sturgeon and New Zealand rack of lamb will be available at the carving station from noon-5 p.m.

*There will be Easter Sunday specials in all of the Station properties. Iron Horse Cafes in Boulder and Palace Stations and the Yellow Rose Cafe at Texas Station will serve complete dinners of roast leg of lamb or prime rib or honey roasted ham for $8.99. included are a choice of soup or salad, and dessert.

Guadalajara Bar and Grille at Palace and Boulder Stations and Rosalita's at Sunset Station will put a new twist on traditional Easter fare with a buffet ($9.99) that includes suckling pig and chile-rubbed leg of lamb, fajitas, tacos, handmade tamales, fresh Mexican pastries and margaritas and mariachis. Service is from 11 a.m.-9.p.m.

The Broiler at Boulder Station, The Stockyard at Texas Station and Costa del Sol at Sunset Station will feature special holiday choices for $34.99 per person. A grilled shrimp appetizer is included with all dinners. Boulder Station's Broiler will serve Easter dinner from noon-9 p.m.; Sunset Station, 3-11 p.m.; the Stockyard, 2-10 p.m. Reservations are accepted.

Italian Easter specialities are offered at Sunset Station's Capri from 3-10 p.m.; at Boulder Station's Pasta Palace from 2-9 p.m.; and at San Lorenzo in the Texas Station from 5-10 p.m. The complete dinners ($29.99 per person) includes a choice of soup or salad, lobster cocktail, a choice of entree, and dessert.

Dine at the Feast Around the World buffets at Texas and Sunset Stations, and the Feast buffets at Boulder and Palace Stations. Roast leg of lamb, Virginia ham, holiday pastries, complimentary champagne and an appearance by the Easter Bunny are part of the fun. Easter Sunday Breakfast, 7-11 a.m., is $3.99; dinner will be served from 11 a.m.-10 p.m. -- prices are $11.99 at Texas and Sunset Stations; $9.99 at Boulder and Palace Stations.

In addition to the Easter fare, the regular menus will be available at each restaurant.

More Easter

*Binion's Horseshoe will serve an Easter Buffet ($9.95 per person) that includes Cornish game hens, osso buco, prime rib, honey glazed ham, roast leg of lamb, all kinds of vegetables, salads, soups, desserts and much more. Service is from 11 a.m.-9 p.m.

Binion's Coffee Shop will feature dinners of honey glazed ham or roast turkey from 11 a.m.-9:45 p.m. Priced at $8.50, the dinners include a choice of soup or salad, side dishes and a choice of dessert.

*The World Trade Center 901 E. Desert Inn Road across the street from the Convention Center, will serve an Easter menu for $6.95 per person from 11 a.m.-10 p.m. Included are a choice of soup or salad; a choice of prime rib, honey baked ham, roast leg of lamb, or pan-fried Idaho trout; and a choice of dessert. Short orders

*Hard Rock Cafe, Las Vegas is now serving breakfast. It is the only Hard Rock Cafe in the world to serve the morning meal. Dine on such specialities as Hendrix Hotcakes, Four Tops French toast, The Any Way You Want It ... We've Got It three-egg omelet and the Cafe breakfast signature -- two eggs, a choice of ham, bacon, sausage, or corned beef hash, potatoes and toast. Hard Rock Cafe also features the For The Lil' Rocker -- a Pancake Surprise, or one egg with bacon, hash browns and toast. The breakfast menu will be served every day from 7-11 a.m. Lunch and dinner are available from 11 a.m.-11:30 p.m.

*Green Lips Cafe: An American Bistro has a new spring menu and a wonderful new pastry chef, Sandra Gusse, who also works at Napa in the Rio. The owner of the small restaurant, Gabriel Grigorescu, is a dedicated chef. He's managed to keep the food prices moderate without compromising quality. Lunch prices range from $5-$7.75 for soups, salads and sandwiches to $7-$8.50 for pastas. Dishes for children 12 and under are $3.25-$5.50. The larger dinner menu is also value-priced. Pastas and entrees are priced from $9.50. Included are the house salad and freshly-baked bread. The new desserts list is wonderful. Reservations are suggested for dinner. Call 450-3104.

*Executive Tuesdays, a new, upscale Happy Hour with wine tastings and culinary pairings at Studio 54 in the MGM Grand is becoming the place to be seen for local and visiting business types. For complimentary access to the Tuesday shindigs, just show them a business card. Southern Wine and Spirits hosts the wine tastings each week; Ricardo's Mexican Restaurant in the MGM Grand, offers a variety of complimentary hors d' oeuvres. Each Executive Tuesday includes spectacular ice carvings from Ice Occasions, $2 Fosters specials, and prizes, including a chance to win an MGM Grand Getaway weekend. Hosts for the weekly events are Lark Williams and Mike O'Brian of 97.1 FM-The Point.

*Rio's Wine Cellar maven, Barrie Larvin will host another of the "A Taste of History" wine tasting series April 25. The tasting, $100, will be conducted by the master himself, Larvin, from 3:30-4:30 p.m. Wines to be tasted are: 1975 Chateau D'Yquem, 1984 Chateau Mouton Rothschild, 1985 Vosne Romance Les Malconsortes, 1989 Heitz Martha's Vineyard, 1993 Silver Oak Alexander, and 1994 Screaming Eagle -- Cabernet Sauvignon.
