Leave the lime behind with T&T’s Mexico City guacamole

Nothing spruces up a bowl of guac like some crispy, artful tortilla geometry.

Tacos & Tequila executive chef Saul Ortiz is passionate about serving authentic Mexican dishes, so it should come as no surprise that his guacamole is prepared without lime juice.

Why no lime? “Just like they do it in Mexico City, we don’t add lime juice, because we’re making ours to order,” Ortiz says. “This allows you to highlight the creaminess of the main ingredient, Hass avocados.”

Having tried his version, I’d say Ortiz is onto something. If, however, you want a bit more sweetness, he suggests swapping in yellow onions for the white ones. Or if you want a little more spice, feel free to add as many serrano peppers as you like. Otherwise, this is about as simple a recipe as you’ll find from the Strip.

Mexico City Guacamole

(serves 4)

Ingredients:

2 Hass avocados

½ cup diced seedless tomatoes

¼ cup diced white onions

1 tbsp. chopped cilantro

1 tsp. minced serrano peppers

Method:

Cut open avocados and scoop out the flesh. Smash the avocados until you get a chunky consistency. Mix in all remaining ingredients and serve immediately.
