Chic casual.

If you had a TV show, what’s it about?

I’d go to movie stars’ or famous peoples’ homes and try to accomplish their favorite dish. It would be called The Stars and the Chef.

Do your friends in France see Vegas as an American city or as Disneyland?

They see it as a fun destination—it’s global.

What’s the quintessential Vegas meal?

I’d have to go with surf and turf.

There are a number of French-trained chefs and French restaurants in Las Vegas—Hubert Keller, Thomas Keller, Joël Robuchon, yourself—why do you think that is?

I think Las Vegas just attracts good people.
