Shawn McClain: Sage indeed

Chef Shawn McClain has expanded his repertoire since becoming executive chef of Sage at Aria. A businessman as well as a chef, McClain tells VEGAS INC why drink pairings and simple cooking set him apart.

Describe your brand.

Common themes at my restaurants are local sourcing, seasonal cooking, creative menus.

If you could open a new restaurant in Las Vegas, what and where would it be?

I’d love to do a steakhouse or a gastropub.

Sage does beer pairings. Why?

It was something my team and I thought would be a good fit.

Do you consider yourself a businessman?

Absolutely. One of the biggest reasons for that is the recession. It forced me to be in control of both sides.

To you, what’s the quintessential Las Vegas meal?

A great rib-eye for two, seasonal vegetables and a great, big red wine.
