Since he started Mina Group with tennis legend Andre Agassi in 2002, celebrity chef Michael Mina has opened 18 award-winning restaurants. With American Fish at Aria, Sea Blue and Nobhill Tavern at MGM Grand, StripSteak at Mandalay Bay and Michael Mina at Bellagio, this chef has taken Vegas by storm.

What’s the Michael Mina brand?

Balance in cooking. I’m very focused on balancing flavors in every dish I create. It’s all about the perfect balance of the four essential components to each dish: sweetness, acidity, spice and fat.

What’s different about having a restaurant in Las Vegas than in other cities?

In Las Vegas, I look at each resort as the “city” where the restaurant will open.

Could any of your Las Vegas restaurants be successful in other cities?

Many of the Vegas concepts work really well in other markets with a few minor adjustments. For instance, we used StripSteak at Mandalay Bay as a model for our Bourbon Steak restaurants in San Francisco, Detroit, Scottsdale, Miami and Washington, D.C.
