Columnist Muriel Stevens: Easter offers a wide variety of dining choices

There is no shortage of Easter dining specials. Many restaurants are offering early dining times. Restaurants at many of the hotels will feature special holiday menus in addition to their regular menus.

For a limited time, Simon Kitchen at the Hard Rock Hotel will offer Passover fare (read on).

Remember to make reservations for the restaurants. Except for the high-end brunches, buffets do do not accept reservations.

Park Place Resorts: Park Place Entertainment Las Vegas resorts will feature special Easter buffets and brunches at Bally's, Caesars Palace, Flamingo Las Vegas, Las Vegas Hilton and Paris Las Vegas.

Bally's Big Kitchen Buffet will feature seafood galore -- chilled peeled shrimp and Alaskan crab legs, steamed crab legs, fried fantail shrimp, pan-seared whitefish and mussels Diablo.

At the carving station will be prime rib of beef, leg of lamb and roasted turkey breast. At the Chinese, Italian and American stations will be a variety of favorites, including petite filet mignon, baked ham, roasted Rock Cornish hens and much more.

The dessert selection includes many that are sugar-free. Service is from 11:30 a.m. to 10 p.m.; $19.95 per person.

Caesars Palace champagne brunch in Cafe Lago will star chilled Jonah crab claws, shrimp, Alaskan king crab legs, assorted sushi, smoked salmon, sturgeon and trout. Many fresh salads and an assortment of cheeses and fresh fruits. Maine lobster, crab-stuffed salmon en croute and prime rib will be offered at the carving station.

Among the other main courses are rotisserie leg of lamb, roasted duck, roasted red snapper, kung pao chicken, pastas, many veggies and plenty of desserts. Service is from 11 a.m. to 9 p.m.; $26 per person.

Flamingo's Lindy's restaurant will offer a special Good Friday meal from 11 a.m. to 10 p.m. that features a Sonoma mixed green salad, baked Atlantic cod with fresh vegetables, chateau potatoes and New York cheesecake with raspberry couli and fresh berries. Price is $15.95 per person.

Lindy's Easter Day three-course repast is $17.95 per person; service from 11 a.m. to 10 p.m. Included are cream of asparagus soup, a choice of baked ham or grilled lamb chops, fresh vegetables, roasted garlic mashed potatoes and chocolate cheesecake with fresh berries and whipped cream.

The Flamingo Paradise Garden Buffet offers a view of the waterfalls and tropical gardens along with Easter Sunday brunch for $12.95 per person. Service is from 7 a.m. to 2:30 p.m. Easter dinner buffet, served from 2:30 to 10 p.m., is $17.95 per person.

The Las Vegas Hilton will feature a holiday meal in both the Steakhouse and Andiamo Italian restaurant. Included are a bay shrimp cocktail, a field green salad, a choice of baked Arkansas ham or broiled Montana lamb chops with Yukon mashed potatoes, mixed vegetables, a wild strawberry-custard tart and almond mousse and a glass of Brachetto sparkling red wine.

Service is from 4 p.m. to 10 p.m.; $33 per person. Reservations are recommended. Call 732-5755.

Paris Las Vegas will offer Easter dinner from 11:30 a.m. to 10 p.m. in Le Village Buffet, $23.95 per person. Le Village will feature a wide variety of foods -- fresh fish and seafood, fresh fruits and salads, vegetables, meats, fresh-baked breads and desserts, all prepared in the style of five French provinces.

Sam's Town restaurants:

Easter Sunday will be celebrated at the Firelight Buffet from 10 a.m. to 9 p.m.; $10.99 per person. Among the many foods offered are rotisserie game hens with guava glaze, broiled salmon, pasta with seafood, almond-crusted pork chops, a carving station with honey-baked ham, and leg of lamb and a spring vegetable medley. Among the desserts will be strawberry shortcake and grasshopper pie.

Billy Bob's Steakhouse and Saloon will be open for Easter Sunday brunch from 11 a.m. to 4 p.m. The first glass of champagne or a mimosa or bloody mary is complimentary. Among the food offerings are breakfast items, a chilled seafood and salad display with shrimp cocktail, oysters on the half shell, crab legs, and a choice of rack of lamb ($32) or a seafood omelet ($23) filled with sauteed shrimp, scallops, crab meat and cheese topped with Hollandaise sauce.

A lamb and snapper special will be available from 5 p.m. to 10 p.m.

Willy & Jose's Cantina will feature Easter Sunday dining with a Mexican spin from 5 p.m. to 10 p.m. and the 24/7 Fresh Harvest Cafe will offer two specials, Cornish game hen with black cherry sauce or filet of salmon with dill sauce. Both specials include the salad bar.

Gustav Mauler restaurants:

Gustav Mauler restaurants, BullShrimp at Green Valley Ranch Station Casino, Spiedini at JW Marriott in Summerlin and Sazio at The Orleans will offer prix fixe Easter Sunday dinners.

Easter dinner at BullShrimp is $32.99 per adult; $15.99 for children 12 and under (a la carte menu available). Service is from noon until 8 p.m. Included are a choice of savory seafood mix baked in Newburg sauce or New England clam chowder or fresh spinach salad; a choice of double-cut lamb chop or roasted prime rib or grilled sea bass; and a choice of banana rum bread pudding or chocolate mousse.

Easter dinner at Spiedini is $32.99 per adult; $15.99 for children 12 and under (a la carte menu available). Service is from noon to 8 p.m. Included are a choice of traditional Italian Easter pie (spinach and proscuitto in a flaky crust) or spinach salad or cream of asparagus soup; lamb and lobster or honey-glazed ham or pan-seared sea bass; and a choice of apple pie a la mode or fresh strawberries with Grand Marnier zabaglione.

Sazio's Easter dinner is $16.99 per person (a la carte menu and children's menu available). Service is from noon until 8 p.m. Included are a choice of wild mushroom soup or baby spinach salad; a choice of spit roasted leg of lamb or bourbon-glazed ham or pan-seared salmon filet. Dessert is a chocolate cake with Kahlua creme Anglaise.

Reservations are accepted at all Mauler restaurants.

Mount Charleston Lodge: Mount Charleston Lodge celebrates Easter Sunday with a special menu prepared by Chef Yves Menes. Dinner price is $19.75 per person. Service is from 11 a.m. to 9 p.m. Included are Caesar salad with bay shrimp or vichysoisse; a choice of baked red snapper or prime rib or rack of Colorado lamb or chicken breast in Chardonnay sauce; and a dessert of profiteroles with warm chocolate sauce. A la carte breakfast, lunch and dinner menus available. For Easter reservations and directions, call 872-5408.

The Cannery: The Cannery offers a variety of Easter menu choices. Waverly Steakhouse will offer Easter dinner 3 p.m. to 9 p.m. Atlantic grilled salmon is $21.95; braised shank of Colorado lamb is $25.95; filet mignon Santa Monique is $26.95. Reservations recommended.

Cannery Row buffet will offer classic brunch fare from 9 a.m. to 3 p.m.; $10.95 per person. Breakfast items as well as roasted spring lamb, ham, and a variety of special dishes. Victory Cafe will offer a spring lamb special for $6.95 and grilled ham steak with cheddar cheese grits for $5.95. Both specials include a choice of soup or salad. A la carte menus are available at all Cannery restaurants.

The Rampart Casino at the Resort at Summerlin: The new Carmel Room will serve Easter dinner from 4 p.m. to 10 p.m. Featured are smoked ham with Colonial cider-spiced fruit sauce ($16), stuffed veal tenderloin ($25) or lobster quenelles with blackened scallops ($35). Promenade Cafe will serve Easter dinners from 5 p.m. to 10 p.m. Ham steak is $8.95, stuffed lamb tenderloin is $12.95, Alaskan grilled halibut is $14.95. Reservations recommended for the Carmel Room. Call 607-5700. The Rampart buffet Easter Sunday Brunch is $12.95 per person. Service is from 9 a.m. to 2:30 p.m. A la carte menus available in the restaurants.

Sahara restaurants:

The reincarnated House of Lords steakhouse is offering an Easter Sunday for $28.95 per person. Service is from 5 p.m. to 10 p.m. Included is a house salad with champagne vinaigrette and garlic mashed potatoes and a choice of an 18-ounce bone-in rib-eye or double lamb chops or sauteed jumbo gulf prawns.

For dessert -- fresh berries over ice cream with Chambord liqueur. Easter Sunday brunch buffet will be served from 8 a.m. to 3 p.m.; dinner buffet from 4 p.m. to 10 p.m. One price all day -- $8.95. The food selection is extensive and includes a carving station with honey baked ham, roast turkey with cornbread stuffing and roasted prime rib. Caravan 24-hour coffee shop will feature a $7.99 per person special with a choice of leg of lamb or orange roughy or honey-glazed ham.

Passover specials at Simon Kitchen: Simon Kitchen and Bar at the Hard Rock Hotel is featuring special dishes in celebration of Passover week. Offered are such dishes as chicken soup with matzo balls, Passover popovers, braised brisket of beef with potato kugel, Josh's farfel and cheese and flourless chocolate cake and mixed fruit compote.
