The Loire is the longest river in France, and Sancerre, a controlled appellation named for a village in the dead center of the river, is one of that region's most popular white wines. This is a fresh, crisp white that has the classic undercurrent of fresh apples and limestone, a single vineyard wine from a place called Les Chasseignes. Sancerre is also one of the quintessential white wines for shellfish, and this bottle is ready to drink right now. At 12.5-percent alcohol, it's not overwhelming, and the acid balance is just right for pasta or seafood of any kind.
