The restaurants inside New York-New York are operated by New York-based ARK Restaurants Corp.
The Culinary Union said ARK pays minimum wage or a little above for most jobs and from that, workers must pay $326 per month for family health insurance. ARK employs more than 800 workers.
"It's the support from all these union members that keeps us going inside; that, and knowing that if we let ARK get away with this, the minimum wage, no-benefit disease will spread throughout Las Vegas," said John Ensign, a union committee member at ARK.
