Vinh Sinh Truong, 22, will face a three-judge panel to determine whether he is sentenced to death or life in prison for killing Lisa Sadie on Oct. 19, 1996.
The victim had been studying film at UNLV and was working nights at the hotel's Studio Cafe.
Truong had been a food server at the cafe, but was fired from his job a few days before the murder for excessive tardiness, according to grand jury testimony.
Court documents indicate Truong admitted to police that he had gone to the cafe to take money from a safe and killed Sadie when she found out what he was doing.
