Smilin’ Jack comes for supper

Just bring home a package of roll dough, let it thaw, and call the kids into help create some smiling pumpkins. You won't have to deal with those icky seeds when the carving's done. Pop your creations in the oven and watch them rise from the cookie sheet. Just think how thrilled Linus would be!

When the puffed and golden, slice the jack-o-lanterns open and stuff them with your favorite, piping-hot barbecued beef. Last but not least, add some melted Cheddar for a cheesy grin and glowing eyes. With these sandwiches, the light won't go out until they lick their fingers clean.

Smilin' Jack sandwiches: Made with frozen rolls, they're simple and easy and a healthy, fun kids' dinner that should power them through a big night of trick-or-treating.

Smilin' Jacks

2 Texas rolls

1 egg, beaten

Thaw rolls and press together to form a flat oval shape. With a knife, cut out a wide V-shape in side of oval. Rotate the V a quarter-turn and tuck the point under the pumpkin to form a stem. Trim, if necessary.

Place on cookie sheet coated with nonstick cooking spray. Cut out 3 large triangles for eyes and a nose and a large crescent shape for a mouth. Leave some teeth in, if desired. See photo for placement.

Cut 3 curved lines from top to bottom, almost all the way through the dough.

Brush with egg and allow to rise for 30 minutes. Bake at 350 degrees for about 20 minutes or until golden brown. Let cool on rack and then slice horizontally. Filling with piping-hot barbecue beef topped with cheese, or your own favorite sandwich-makings. Makes one sandwich.
